2 1/2 lbsFresh kidney suet from
-choice beef
10 lbsChoice beef round, ground
-coarsely
1 pintWater
1 cupFresh garlic buttons
2 largeOnions
2 canEl Chico green chilies
10 tbspPaprika
2 tbspOregan
3 tbspCumino
4 tbspSalt
Cayenne pepper to taste
24 ozTomato juice
12 ozCarrot juice
4 largeDried chili pods
1 1/2 cupOyster crackers, pulverized
-to a fine powder
1 cupWater
Procedures:
1Grind suet, slowly melt in a large heavy cooking pot until liquefied.
2Add meat and water.
3Stir often to brown evenly.
4Combine garlic, onions, and green chilies in blender and blend into juice.
5Add dry seasoniongs.
6Add tomato and carrot juices.
7Stir often and simmer until meat is tender.
8Float dried chili pods on top.
9Cook about 3 hours.
10Near end of cooking time, prepare cracker meal by adding pulverized crackers to a cup of water, stirring into a liquid and add to chili.
11Stir well.
12Remove chili pods before serving.
13If possible, leave chili in pot and allow to marinate overnight - it develops the flavor.
