Ingredients:
1 Chicken, cut up
1 clGarlic, peeled
1/4 cupFlour
2 tspSalt
1/8 tspPepper
1/4 cupOil
1 canTomatoes (28 oz)
8 smallWhite onions, peeled
6 ozTomato paste
2 tspSugar
1 Bay leaf
Procedures:
1Rub chicken with garlic.
2Mince garlic and save.
3Combine flour, 1 tsp salt, and pepper in large paper bag; shake chicken pieces until coated.
4Heat oil in dutch oven.
5Brown chicken a few pieces at a time on all sides; drain on absorbent paper.
6Pour off any oil remaining in pan.
7Return chicken to dutch oven.
8Add garlic, tomatoes, tomato paste, onions, sugar, 1 tsp salt, and bay leaf.
9Cover.
10Basting occasionally with sauce in the pan, simmer 1 hour or until chicken is tender
