Ingredients:
INGREDIENTS
1 Rabbit, cut up
3 tbspOil, olive
1/4 cupFennel, fresh, sliced
2 tbspGarlic, chopped
1 cupOnions, Sweet, sliced
2 tbspTomato Paste
1/2 cupWine, White dry
1/2 cupStock, chicken
1 cupTomatoes, diced
9 ozOlives, Green, pitted
-sliced (jar)
3 tbspParsley, fresh, chopped

1 cupFlour
1 1/2 tspBaking flour
1/2 tbspSugar
1/2 tspSalt
2 tbspThyme, dried
2 tbspButter
1/2 cupMilk
1 Egg, beaten with
1 tsp-water
Procedures:
1Brown rabbit in heated olive oil.
2Add the garlic, sweet onions, and fennel.
3Saute until onions are translucent.
4Add the wine and tomato paste, cook over low heat until the sauce is reduced by half.
5Add the tomatoes, chicken stock and olives.
6Simmer in a 350 degree over for 1 ?hours.
7Add more stock to the sauce as needed.
8Cool the rabbit and remove the meat from the bones.
9Dice into chunks and add fresh parsley.
10Season with salt and pepper.
11Keep chilled.

17Seal sides and top with egg wash.
18Bake at 450 degrees until golden
