Salmon-filled puffy omelet

Ingredients:
3 Eggs, separated
Dash salt
Dash pepper
Nonstick spray coating
1 ozNeufchatel cheese, cut up
2 ozThinly sliced smoked salmon
Smoked turkey or ham
Chopped
1 tbspSnipped fresh parsley
Procedures:
1Preheat oven to 350°F.
2In a small mixing bowl with electric mixer, beat egg whites with salt and pepper till stiff peaks form (tips stand straight).
3In another bowl, lightly bet yolks with a fork.
4Fold whites into yolks.
5Spray a 10 inch ovenproof skillet with nonstick spray coating.
6Heat skillet over medium-high het.
7Spread egg mixture in pan.
8Cook 3 to 5 minutes or till bottom is golden.
9Place skillet in hot oven.
10Bake 3 minutes or till nerly dry.
11Sprinkle with cheese, salmn, and parsley.
12Bake 1 minute more or till cheese is melted.
13To serve, fold omelet in half.
14Makes 2 servings.
