Chicken cacciatore

Ingredients:
8 Chicken Pieces, small
1 ozPlain flour
3 tbspOlive oil
3 Cloves garlic, crushed
2 Bay leaves
300 mlRed wine
Salt and pepper
4 ozBlack olives
14 ozCan tomatoes
Chopped parsley to garnish
Procedures:
1Coat chicken pieces in flour.
2Fry in oil until golden brown.
3Remove and drain off excess fat.
4Return chicken to pan, add garlic, bay leaves, wine and seasoning.
5Simmer for 20 mins.
6Add olives and tomatoes and simmer for a further 20 mins.
7Serve garnished with chopped parsley
