Ingredients:
2 Eggplants, cut into chunks
2 Onions, chopped
2 Green peppers, chopped
2 Cloves garlic, pressed
3 cupCanned tomatoes
1 tbspLow-sodium tamari
1/2 tspBasil
1/2 tspThyme
1 cupWhole wheat bread crumbs
Procedures:
1Saute onion, garlic, green pepper and eggplant in ?cup water for 5 minutes.
2Add tomatoes, breaking them up with a fork.
3Stir in seasonings.
4Cook until eggplant is tender, about 20 minutes.
5Place this mixture in a large baking dish.
6Sprinkle with the bread crumbs.
7Bake at 350 °F for 30 minutes.
