Ingredients:

| | Eggplants, cut into chunks | | 2
| | Onions, chopped | | 2
| | Green peppers, chopped | | 2
| | Cloves garlic, pressed | | 3
| cup | Canned tomatoes | | 1
| tbsp | Low-sodium tamari | | 1/2
| tsp | Basil | | 1/2
| tsp | Thyme | | 1
| cup | Whole wheat bread crumbs |

Procedures:
| 1 | Saute onion, garlic, green pepper and eggplant in ?cup water for 5 minutes. | | 2 | Add tomatoes, breaking them up with a fork. | | 3 | Stir in seasonings. | | 4 | Cook until eggplant is tender, about 20 minutes. | | 5 | Place this mixture in a large baking dish. | | 6 | Sprinkle with the bread crumbs. | | 7 | Bake at 350 °F for 30 minutes. |
