Ingredients:
1 largeOnion, chopped
6 Garlic cloves, chopped
2 cupRendered beef kidney suet
2 1/2 lbsExtra lean chuck beef, cubed
1 lbsHam, cubed
2 cupWater
1 tspCumin, ground
2 tspOregano
1 cupRed chili pulp *OR*
6 tbspChili powder
1 tbspSalt to taste
Procedures:
1Cook onion and garlic in rendered beef suet until onion is limp and yellow.
2Add beef and ham and cook, stirring often, until it is a uniform gray color.
3Add water, mix well, simmer one to one and a half hours.
4Add cumin, oregano, chili pulp or powder, and salt to meat mixture.
5Stirring frequently to prevent sticking, simmer for an additional hour
