Ingredients:
| 1
| lbs | Beef sirloin steak, cut | | | Across grain - bite size | | 1/2
| tsp | Ground pepper, prefer. white | | 2
| tbsp | Butter or margarine | | 6
| oz | Portobello or white mushroom | | 6
| | Scallions, sliced | | 1
| can | Beef gravy (10 ?oz.) | | 2
| tbsp | Balsalmic vinegar or 1 Tbs. | | | Red-wine vinegar | | 1/3
| cup | Light sour cream |

Procedures:
| 1 | Sprinkle steak strips with half the pepper. | | 2 | Melt 1 t butter in large, preferably nonstick, skillet over med-high heat. | | 3 | Add sliced mushrooms, whites of scallions and remaining pepper. | | 4 | Cook, stirring often, until mushrooms are tender, about 8 minutes. | | 5 | Remove with slotted spoon to bowl. | | 6 | Wipe skillet clean. | | 7 | Add remaining butter and heat over high heat until sizzling. | | 8 | Add beef strips and stir-fry about 2 minutes until browned. | | 9 | Stir in gravy and vinegar; bring to a boil. | | 10 | Remove from heat and stir in sour cream until blended. | | 11 | Sprinkle with green part of scallions. | | 12 | Serve immediately. | | 13 | Per serving: 184 cal, 19 g. | | 14 | Pro, 6 g carb, 10 g fat, 342 mg sodium. | | 15 | Reprinted from woman"s day magazine, april 1996 |
