Easy and elegant beef stroganoff

Ingredients:
1 lbsBeef sirloin steak, cut
Across grain - bite size
1/2 tspGround pepper, prefer. white
2 tbspButter or margarine
6 ozPortobello or white mushroom
6 Scallions, sliced
1 canBeef gravy (10 ?oz.)
2 tbspBalsalmic vinegar or 1 Tbs.
Red-wine vinegar
1/3 cupLight sour cream
Procedures:
1Sprinkle steak strips with half the pepper.
2Melt 1 t butter in large, preferably nonstick, skillet over med-high heat.
3Add sliced mushrooms, whites of scallions and remaining pepper.
4Cook, stirring often, until mushrooms are tender, about 8 minutes.
5Remove with slotted spoon to bowl.
6Wipe skillet clean.
7Add remaining butter and heat over high heat until sizzling.
8Add beef strips and stir-fry about 2 minutes until browned.
9Stir in gravy and vinegar; bring to a boil.
10Remove from heat and stir in sour cream until blended.
11Sprinkle with green part of scallions.
12Serve immediately.
13Per serving: 184 cal, 19 g.
