Ingredients:
| | Veg. cooking oil | | 6
| | 4 oz. skinned, boned chickes | | 1
| tbsp | Margerine | | 1
| tbsp | Plus 1 ts all purpose flour | | 1
| | 12 oz. can evaporated skimmk | | 1
| tbsp | Freeze dried chives | | 3/4
| cup | (3 oz) crumbled feta cheese |

Procedures:
| 1 | Coat a large nonstick skillet with cooking spray, place over med. heat until hot. | | 2 | Add chicken, and cook 7 min on each side until done. | | 3 | Set aside and keep warm. | | 4 | Melt margarine in a small saucepan over medium heat, add flour. | | 5 | Cook 1 minute stirring constantly with a wire whisk. | | 6 | Gradually add milk, stirring constantly. | | 7 | Stir in chives. | | 8 | Reduce heat to medium-low and cook, stirring constantly, 3 minutes or until thickened and bubbly. | | 9 | Add cheese, and stir until cheese melts. | | 10 | Spoon over chicken 246 calories, 8.2g fat, 87mg cholestrol per servin |
