Ingredients:
Veg. cooking oil
6 4 oz. skinned, boned chickes
1 tbspMargerine
1 tbspPlus 1 ts all purpose flour
1 12 oz. can evaporated skimmk
1 tbspFreeze dried chives
3/4 cup(3 oz) crumbled feta cheese
Procedures:
1Coat a large nonstick skillet with cooking spray, place over med. heat until hot.
2Add chicken, and cook 7 min on each side until done.
3Set aside and keep warm.
4Melt margarine in a small saucepan over medium heat, add flour.
5Cook 1 minute stirring constantly with a wire whisk.
6Gradually add milk, stirring constantly.
7Stir in chives.
8Reduce heat to medium-low and cook, stirring constantly, 3 minutes or until thickened and bubbly.
9Add cheese, and stir until cheese melts.
10Spoon over chicken 246 calories, 8.2g fat, 87mg cholestrol per servin
