| | Yellow pepper, seeded, sliced | | 1/4
| | Red pepper, seeded, sliced | | 2
| tbsp | Plain flour | | | Salt and pepper | | 200
| ml | Chicken stock | | 250
| ml | Single cream | | 1
| lbs | Chicken, cooked, cut into | | | Strips | | 2
| | Egg yolks | | 1
| tsp | Paprika | | 1
| tbsp | Lemon juice | | 2
| tbsp | Dry sherry |

Procedures:
| 1 | Melt butter in large pan, add mushrooms, peppers and saute for 5 mins. | | 2 | Stir in flour and seasoning. | | 3 | Gradually stir in stock and bring to the boil, stirring until thickened. | | 4 | Add cream and chicken pieces and cook over low heat until chicken is thoroughly heated. | | 5 | Meanwhile beat together egg yolks, paprika, lemon juice and sherry. | | 6 | Slowly add to the chicken mixture, stirring constantly. | | 7 | Adjust seasoning and serve |
