Ingredients:

| small | Onion, diced | | 2
| tbsp | Melted fat | | 2
| cup | Potatoes, cooked & diced | | 2
| cup | Fish, cooked & flaked | | 1
| tsp | Salt | | | Pinch of pepper | | 1
| tsp | Worcestershire sauce | | 2/3
| cup | Evaporated milk, undiluted | | 2
| | Eggs, hard cooked, shelled | | | - and diced |

Procedures:
| 1 | Simmer the onion in the melted fat for about 5 minutes. | | 2 | Add the potaoes, fish and eggs. | | 3 | Sprinkle with the salt and pepper. | | 4 | Add the worcestershire sauce to the milk and stir into the fish and potato mixture. | | 5 | Cover and cook over moderate heat until hash is crusty and brown on the bottom. | | 6 | With pancake turner, turn the hash like an omelet and brown on the other side. | | 7 | Serve piping hot. | | 8 | An old-fashioned rule from the coast of maine |
