Ingredients:
1 smallOnion, diced
2 tbspMelted fat
2 cupPotatoes, cooked & diced
2 cupFish, cooked & flaked
1 tspSalt
Pinch of pepper
1 tspWorcestershire sauce
2/3 cupEvaporated milk, undiluted
2 Eggs, hard cooked, shelled
- and diced
Procedures:
1Simmer the onion in the melted fat for about 5 minutes.
2Add the potaoes, fish and eggs.
3Sprinkle with the salt and pepper.
4Add the worcestershire sauce to the milk and stir into the fish and potato mixture.
5Cover and cook over moderate heat until hash is crusty and brown on the bottom.
6With pancake turner, turn the hash like an omelet and brown on the other side.
7Serve piping hot.
