3 tbspCorn oil
1 1/2 cupGreen pepper, chopped
3/4 cupOnion, sliced
1/4 cupCornstarch
2 cupChicken stock
3 tbspSoy sauce
2 cupCooked chicken, shredded
3 Tomatoes, chopped
Rice, cooked, hot
Procedures:
1In a skillet heat the oil and add the peppers and onions.
2Cover and cook over low heat until tender but not brown.
3Blend the cornstarch with a little bit of chicken stock.
4Add the remaining stock and the soy sauce.
5Gently stir the shredded chicken and the stock mixture into the vegetables.
6Cook, stirring constantly, until the sauce is clear and thickened.
7Add the tomatoes and heat through.
8Serve over hot rice
