| cup | Cornstarch | | 2
| cup | Chicken stock | | 3
| tbsp | Soy sauce | | 2
| cup | Cooked chicken, shredded | | 3
| | Tomatoes, chopped | | | Rice, cooked, hot |

Procedures:
| 1 | In a skillet heat the oil and add the peppers and onions. | | 2 | Cover and cook over low heat until tender but not brown. | | 3 | Blend the cornstarch with a little bit of chicken stock. | | 4 | Add the remaining stock and the soy sauce. | | 5 | Gently stir the shredded chicken and the stock mixture into the vegetables. | | 6 | Cook, stirring constantly, until the sauce is clear and thickened. | | 7 | Add the tomatoes and heat through. | | 8 | Serve over hot rice |
