Ingredients:
1 cupThinly sliced carrots
1/2 cupChopped onion
1 tbspReduced calorie margarine
1/2 cupSliced mushrooms
1 (8 ounce) package noodles
-cooked and drained
2 cupLow-fat cottage cheese
1/2 cupSkim milk
1/2 tspSalt
1/2 tspBasil
1/4 tspThyme
1/8 tspPepper
Procedures:
1Yield 12 servings - ?c ea.
2Each serving may be exchanged for: 1 bread, 1 low-fat meat parsley sprigs (optional) combine carrots, onion and margarine in non-stick skillet; cook on medium heat until tender.
3Add mushrooms and cook 5 minutes; set aside combine remaining ingredients, except parsley, in large bowl; stir in cooked vegetables.
4Turn mixture into nonstick 2 qt. casserole.
5Cover and bake at 350°F for 30 minutes or until bubbly.
6Garnish with parsley before serving, if desired
