Ingredients:
1/4 cupFresh lemon juice
1/4 cupWater
2 cupCilantro, chopped and packed
1/4 cupFresh coconut, chopped
1/4 cupOnion, finely chopped
2 tbspChopped gingerroot
2 tspChopped fresh red chile
1 tspSugar
1 tspSalt
1/4 tspGround black pepper
Procedures:
1Combine lemon juice, water and ?c. cilantro in blender and puree.
2Add remaining cilantro ?c. at a time, reducing mixture to a puree each time.
3Add remaining ingredients and reduce mixture to a puree again.
4Serve immediately.
5Makes about 2 cups notes : very fresh tasting.
