Ingredients:
| 1
| cup | Mixed legumes | | 3
| cup | Water | | 1
| lbs | Mixed vegetables | | 4
| tbsp | Ghee | | 1
| small | Onion, diced. | | | 2 ea Garlic cloves, chopped | | | 1 ea Green chili, chopped | | 1/2
| tsp | Turmeric | | 2
| tsp | Garam masala | | | Salt to taste | | 1
| tbsp | Lemon juice | | 3
| tbsp | Chopped cilantro |

Procedures:
| 1 | Wash legumes & soak for an hour. | | 2 | Place water & legumes in a large pot & bring to a boil. | | 3 | Cut vegetables into bite sized pieces & add to the legumes. | | 4 | Cook for 10 minutes. | | 5 | Heat ghee in a separate pot & saute onion & garlic till golden. | | 6 | Stir in chili, turmeric & garam masala. | | 7 | Mix thouroughly. | | 8 | Transfer legumes & vegetables into pot with ghee mixture & stir well. | | 9 | Add salt & cook for another 20 minutes until everything is tender. | | 10 | Add lemon juice & cilantro & serve hot. | | 11 | Michael pandya, "indian vegetarian cooking |
