Ingredients:

| lbs | Catfish fillets | | | 2 ea Eggs, lightly beaten | | 1
| tsp | Ground mustard | | 1/2
| tsp | Salt | | 1/2
| tsp | White pepper | | 1/2
| tsp | Ground red pepper | | 1/2
| cup | Corn flour | | 3/4
| cup | Corn meal | | 2
| quart | Light veg. or peanut oil |

Procedures:
| 1 | Thoroughly dry fish fillets. | | 2 | Mix eggs, mustard, salt, white pepper, and red pepper well. | | 3 | Place fish in mixture and chill for 1 to 2 hours. | | 4 | Mix corn flour and corn meal. | | 5 | Remove fish from egg mixture and dust lightly with flour mixture, shaking off excess. | | 6 | Heat oil to 375 °F. | | 7 | Drop fish into oil and fry until fish floats and is light golden brown, 4 to 6 minutes |
