Ingredients:
1 lbsBeijing-style udon noodles
1 pack(10 oz) bean sprouts
1 tbspSalad oil
1/2 lbsLean ground beef
1 tspMinced garlic
1 tspMinced ginger root
4 1/2 tspHorse bean sauce with chili
3/4 cupChicken broth
2 tbspSherry
1 tbspLight soy sauce
1/2 cupChopped green onions
1 tbspCornstarch
2 tbspWater
Chinese parsley
Procedures:
1Cook noodles in boiling water for about 6 minutes, rinse and drain.
2Place on serving platter.
3Lightly blanch bean sprouts and arrange around noodles; set aside.
4In a wok, heat oil and brown beef.
5Add garlic, ginger, bean sauce; stir-fry 1 minute.
6Add broth, sherry, and soy sauce; lower heat to medium and cook until liquid is reduced to half.
7Stir in green onions.
8Combine cornstarch and water, stir into hot mixture.
9Cook until sauce thickens.
10Pour over noodles.
11Garnish with chinese parsley.
12Makes 4 servings.
