Chicken breasts with mustard-chile sauce

Ingredients:
1 1/2 lbsChicken breasts, boneless
And skinned (4 pieces from
2 chickens)
1 tbspButter
1 tbspOriental style hot oil
OR
1 tbspVeg oil and dash cayenne
2 Cloves garlic, minced or
Pressed
3 tbspDijon style mustard
1 canChopped green chiles (4 oz)
1/2 cupWhipping cream
Salt and pepper to taste
Chopped parsley for garnish
Procedures:
1Wipe chicken dry and set aside.
2In a large skillet over medium-high heat, melt buttter, add hot oil and garlic.
3Add chicken breasts, cook turning often until cooked throughly.
4Transfer to warm platter and keep warm.
5Add mustard to skillet.
6Stir until blended and brownings are scraped up.
7Stir in green chilies.
8Add cream and boil over high heat until reduced and slightly thickened.
9Taste and add salt and pepper top taste.
10Pour sasuce over the chicken breasts.
11Garnish with parsley, if desired.
