Ingredients:

| lbs | Chicken breasts, boneless | | | And skinned (4 pieces from | | | 2 chickens) | | 1
| tbsp | Butter | | 1
| tbsp | Oriental style hot oil | | | OR | | 1
| tbsp | Veg oil and dash cayenne | | 2
| | Cloves garlic, minced or | | | Pressed | | 3
| tbsp | Dijon style mustard | | 1
| can | Chopped green chiles (4 oz) | | 1/2
| cup | Whipping cream | | | Salt and pepper to taste | | | Chopped parsley for garnish |

Procedures:
| 1 | Wipe chicken dry and set aside. | | 2 | In a large skillet over medium-high heat, melt buttter, add hot oil and garlic. | | 3 | Add chicken breasts, cook turning often until cooked throughly. | | 4 | Transfer to warm platter and keep warm. | | 5 | Add mustard to skillet. | | 6 | Stir until blended and brownings are scraped up. | | 7 | Stir in green chilies. | | 8 | Add cream and boil over high heat until reduced and slightly thickened. | | 9 | Taste and add salt and pepper top taste. | | 10 | Pour sasuce over the chicken breasts. | | 11 | Garnish with parsley, if desired. | | 12 | Submitted by jschlank@pacificnet.net |
