Ingredients:
SALAD
1 1/3 tbspSeasame seeds
6 ozSnow peas (fresh or frozen)
1/2 cupChopped celery (inner stalk)
3/4 cupCorn kernels (fresh/frozen)
1/4 cupChopped cilantro
1/2 lbsPasta (short bite-sized)
1 lbsBoneless skinless chicken
Breasts
SPICY PEANUT SAUCE
2 2/3 tbspSoy sauce
2 2/3 tbspUnseasoned rice vinegar
1/4 cupCold water
2 tbspSugar
1/4 tspSalt
1 1/2 tspMinced ginger root
1 tspMinced garlic
1/4 cupGround roasted peanuts
2 tbspPeanut oil
2 tbspSesame oil
2 tbspHot chili oil, or to taste
Procedures:
1Toast sesame seeds in a small, dry skillet over medium heat, stirring constantly until seeds are golden, 3-4 minutes.
2Blanch fresh snow peas and corn in boiling water for 30 seconds, or thaw if frozen.
3Cook pasta, drain and cool.
4Poach chicken in simmering water in a covered skillet until chicken is just done, about 15 to 20 minutes.
5Don"t overcook.
6To prepare sauce, add first 7 ingredients to a blender and process on high speed 1 minute.
7Add ground peanuts and process 1 minute more.
8In a cup, combine oils and drizzle into blender mixture while blending at low speed.
9In a large bowl combine blanched or thawed corn, cooked pasta, celery, cilantro and ?of the sauce.
10Chop chicken and arrange with snow peas over the pasta mixture.
11Top with remaining sauce and toasted sesame seeds.
12Serve chilled or at room temperatur
