Ingredients:
| 1/4
| cup | Butter, or oil | | 1
| med | Onion, peeled, ends removed | | | -minced | | 2
| | Celery ribs, ends removed | | | -thinly sliced | | 2
| | Sweet red peppers, cored | | | -diced | | 2
| med | Zucchini, unpeeled, coarsely | | | -chopped | | | -salt and pepper to taste | | 2
| cup | Small elbow macaroni | | 3
| | Eggs | | 2/3
| cup | Cottage cheese | | 1/4
| cup | Sour cream | | 1
| tsp | Thyme | | 3/4
| tsp | Paprika, divided | | 1/4
| tsp | Hot red pepper sauce, opt | | 2
| tbsp | Parmesan, or | | 1/4
| cup | -shredded Swiss |

Procedures:
| 1 | Melt butter in large skillet over medium heat. | | 2 | Add onion & saute 5 minutes. | | 3 | Add celery & saute 5 minutes. | | 4 | Add peppers & saute 3 minutes. | | 5 | Add zucchini, salt & pepper; stir & saute over high heat till vegetableetables are just tender, 3 minutes. | | 6 | Cook pasta, uncovered, in large pan of boiling salted water over high heat, stirring occasionally, till nearly tender, 5 minutes. | | 7 | Drain. | | 8 | Rinse with cold water & drain well. | | 9 | Transfer to large bowl. | | 10 | Beat eggs. | | 11 | Whisk in cottage cheese & sour cream along with thyme & ?t paprika. | | 12 | Add mix to pasta & toss. | | 13 | Add vegetableetables & toss. | | 14 | Taste & adjust seasonings. | | 15 | Transfer mix to buttered, shallow 6 cup baking dish. | | 16 | Sprinkle with cheese & remaining paprika. | | 17 | Let stand 5 minutes before serving. | | 18 | Makes 4 main courses, or 6 side dishes |
