Ingredients:
1/4 cupButter, or oil
1 medOnion, peeled, ends removed
-minced
2 Celery ribs, ends removed
-thinly sliced
2 Sweet red peppers, cored
-diced
2 medZucchini, unpeeled, coarsely
-chopped
-salt and pepper to taste
2 cupSmall elbow macaroni
3 Eggs
2/3 cupCottage cheese
1/4 cupSour cream
1 tspThyme
3/4 tspPaprika, divided
1/4 tspHot red pepper sauce, opt
2 tbspParmesan, or
1/4 cup-shredded Swiss
Procedures:
1Melt butter in large skillet over medium heat.
2Add onion & saute 5 minutes.
3Add celery & saute 5 minutes.
4Add peppers & saute 3 minutes.
5Add zucchini, salt & pepper; stir & saute over high heat till vegetableetables are just tender, 3 minutes.
6Cook pasta, uncovered, in large pan of boiling salted water over high heat, stirring occasionally, till nearly tender, 5 minutes.
7Drain.
8Rinse with cold water & drain well.
9Transfer to large bowl.
10Beat eggs.
11Whisk in cottage cheese & sour cream along with thyme & ?t paprika.
12Add mix to pasta & toss.
13Add vegetableetables & toss.
14Taste & adjust seasonings.
15Transfer mix to buttered, shallow 6 cup baking dish.
16Sprinkle with cheese & remaining paprika.
17Let stand 5 minutes before serving.
18Makes 4 main courses, or 6 side dishes
