Ingredients:
12 ozEvaporated skimmed milk
1 tbspCornstarch
1/2 tspSalt
1/4 tspPepper
1 tspOregano
1/4 tspNutmeg
1/2 cupWhite wine
3 largeBaking potatoes, washed --
Sliced thin, but not skinned
1 smallOnion, chopped
4 ozDeli ham, thin sliced
1 cupGrated low-fat swiss cheese-
Or jarlsberg
2 tbspGrated parmesan cheese
Procedures:
1Preheat oven to 350 deg f.
2In a medium saucepan, heat the milk, salt, cornstarch, pepper and nutmeg until milk comes to a boil and the sauce thickens.
3Remove from heat and set aside.
4Coat a 1 ?quart casserole dish with nonstick spray.
5Layer half the potato slices inthe bottom and sides of the dish.
6Cover with cheese, onion, ham and oregano.
7Cover with remaining potatoes.
8Pour sauce over the top.
9Bake for 1 hour.
10If desired, place casserole under broiler for 5 minutes to brown the top.
11Per serving: 278 calories, 7.7 g fat, 31.2 g carbo, 565 mg sodium, 34 mg chol.
