Ingredients:
2 cupWater
2/3 cupBarley, uncooked quick-
-cooking barley
2 cupChicken, diced cooked
1/2 cupCelery, diced
1/2 cupTomatoes, chopped
1/2 cupRed onion, chopped
2 tbspLemon juice, fresh
1 tbspDijon mustard
5 Lettuce, leaves
Procedures:
1Bring water to a vigorous boil in a medium saucepan over high heat.
2Stir in barley; return to a boil.
3Reduce heat, cover, and simmer 8-10 minutes or until barley is tender, stirring occasionally.
4Drain if necessary; cool.
5Toss barley with remaining ingredients excpt lettuce.
6Serve on lettuce leaves.
