Ingredients:
3 tbspVegetable oil
1 medYellow bell pepper, chopped
1 medZucchini, sliced
1/2 cupThinly sliced Bermuda onion
8 eachAsparagus stalks
1 cupWhole wheat couscous
Procedures:
1In a medium skillet, heat 1 tablespoon oil over moderate heat.
2Add pepper, zucchini, onion and asparagus and saute, stirring, for 5 minutes or until crisp-tender.
3In a medium saucepan, bring 1-?cups water to a boil.
4Add remaining oil and couscous.
5Cover, remove from heat and let stand 5 minutes.
6Spoon couscous onto a serving platter and arrange vegetables on top
