Ingredients:
16 ozMixed cut green & wax beans
(1 can)
1/2 cupCider vinegar
1 tbspMixed pickling spices
1/4 cupCelery, finely chopped
1/4 cupGreen pepper, chopped
1/4 cupOnion, chopped
2 tbspPimiento, chopped
Sugar substitute equivalent
-to 5 teaspoons sugar
Crisp lettuce leaves
Procedures:
1Drain beans, saving liquid.
2Combine this liquid with vinegar in a saucepan.
3Add mixed pickling qpice, either loose or in a small cheesecloth bag.
4Bring to a boil, cover, reduce heat to low, and simmer gently for 10 minutes.
5Meanwhile, mix all the vegetables in a bowl.
6Remove liquid from heat; add sweetener and stir until dissolved.
7Pour over vegetables and remove spice bag or loose spices.
8Chill several hours, stirring occasionaly.
9Drain before serving on crisp lettuce.
