Ingredients:

| tsp | Extra-virgin olive oil | | 2
| | Celery stalks, minced | | 2
| | Shallots, minced | | 1
| tsp | Fresh rosemary, or | | 1
| tbsp | Cornstarch | | 15
| oz | Cannellini, canned | | | Salt | | 10
| | Black olives - brine cured | | 1 1/2
| lbs | Chicken breasts | | 4
| | Garlic cloves, minced | | 15
| oz | Tomatoes, canned, diced | | | - ˝ts dried rosemary | | 1
| cup | Chicken broth, defatted | | 12
| oz | Spinach - fresh | | | Black pepper, fresh ground |

Procedures:
| 1 | Preparation time = 25 minutes cannellini are white kidney beans. | | 2 | Drain and rinse before use. | | 3 | Wash fresh spinach thoroughly and chop. | | 4 | Chicken breasts should be skinned and de-boned and cut into bite-size pieces. | | 5 | Heat 2 ts oil in large nonstick or cast-iron skillet over medium-high heat. | | 6 | Add chicken and saut?until firm and white, not pink, about 3 minutes. | | 7 | Remove from skillet and keep warm. | | 8 | Reduce heat to medium and add remaining 1 ts oil. | | 9 | Add celery, garlic and shallots and saut?until limp and fragrant, about 5 minutes. | | 10 | Add tomatoes and rosemary and simmer minutes. | | 11 | Dissolve cornstarch in chicken broth and add to skillet. | | 12 | Bring to boil and cook until sauce is thickenedd. | | 13 | Add cannellini beans and chicken; heat through. | | 14 | Just before serving, add spinach to skillet and toss until wilted, about 3 minutes. | | 15 | Season with salt and pepper. | | 16 | Garnish with chopped olives. serve at once |
