Ingredients:

| | Rib of celery | | 2
| cup | Long grain rice | | 1
| lbs | Ham, cubed | | 1
| cup | Onion, chopped | | 3/4
| cup | Fresh parsley, chopped | | 1
| large | Bay leaf | | 2
| tsp | Salt | | 1/4
| tsp | Tabasco | | 2
| large | Onions | | 3
| | Garlic cloves | | 1
| lbs | Smoked sausage | | 1/2
| | Stick of margarine | | 1
| cup | Green pepper, chopped | | 1
| can | Tomato paste 6 oz. | | 1/4
| tsp | Thyme | | 1/2
| tsp | Pepper | | 1/4
| cup | Green onion, chopped |

Procedures:
| 1 | Put chicken, 1 onion, (cut in half), celery and 1 garlic clove in pot. | | 2 | Cover with water. | | 3 | Cook for approximately 1 hour or until chicken is tender. | | 4 | Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed). | | 5 | Debone chicken and cut sausage into ?inch cubes. | | 6 | Fry sausage and ham in dutch oven until lightly browned. | | 7 | Remove meat from pot and add margarine. | | 8 | Saute 1 chopped onion, pepper and ?cup chopped parsley until tender. | | 9 | Add chicken, sausage and ham to vegetables. | | 10 | Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and tabasco. | | 11 | Add cooked rice and mix thoroughly. | | 12 | Simmer over low heat for 15 minutes. | | 13 | Stir frequently. | | 14 | Remove bay leaf and toss in ?cup chopped parsley and ?cup chopped green onion tops |
