Chicken and sausage jambalaya

Ingredients:
1 smallFryer
1 Rib of celery
2 cupLong grain rice
1 lbsHam, cubed
1 cupOnion, chopped
3/4 cupFresh parsley, chopped
1 largeBay leaf
2 tspSalt
1/4 tspTabasco
2 largeOnions
3 Garlic cloves
1 lbsSmoked sausage
1/2 Stick of margarine
1 cupGreen pepper, chopped
1 canTomato paste 6 oz.
1/4 tspThyme
1/2 tspPepper
1/4 cupGreen onion, chopped
Procedures:
1Put chicken, 1 onion, (cut in half), celery and 1 garlic clove in pot.
2Cover with water.
3Cook for approximately 1 hour or until chicken is tender.
4Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed).
5Debone chicken and cut sausage into ?inch cubes.
6Fry sausage and ham in dutch oven until lightly browned.
7Remove meat from pot and add margarine.
8Saute 1 chopped onion, pepper and ?cup chopped parsley until tender.
9Add chicken, sausage and ham to vegetables.
10Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and tabasco.
11Add cooked rice and mix thoroughly.
12Simmer over low heat for 15 minutes.
13Stir frequently.
14Remove bay leaf and toss in ?cup chopped parsley and ?cup chopped green onion tops
