Ingredients:

| cup | Uncooked orzo pasta | | 1 1/2
| cup | Chopped cooked chicken | | 1/3
| cup | Prepared Italian dressing | | 6
| oz | Jar marinated artichoke | | | -hearts, drained and coarsly | | | -chopped | | 1
| cup | Diced mozzarella or | | | -provolone cheese | | 1
| large | Ripe tomato, seeded and dice | | 1/3
| cup | Pitted, coarsely chopped | | | -Kalamata olives | | 1/4
| cup | Packed fresh basil leaves | | | -cut into thin strips | | 1/2
| cup | Crumbled feta cheese | | 1/2
| cup | Grated parmesan cheese | | | Mixed salad greens | | | Freshly ground black pepper |

Procedures:
| 1 | Cook orzo according to package directions. | | 2 | Drain and rinse with cold water. | | 3 | Drain again. | | 4 | In a large bowl, combine orzo, chicken and dressing. | | 5 | Toss well. | | 6 | Add artichokes, mozzarella cheese, tomatoes, olives and basil. | | 7 | Toss well. | | 8 | Add feta and parmesan cheeses. | | 9 | Toss lightly. | | 10 | Cover and chill at least 30 minutes or up to 6 hours before serving. | | 11 | Serve on salad greens. | | 12 | Season with freshly ground black pepper to taste |
