Chicken and orzo salad with three cheeses

Ingredients:
1 cupUncooked orzo pasta
1 1/2 cupChopped cooked chicken
1/3 cupPrepared Italian dressing
6 ozJar marinated artichoke
-hearts, drained and coarsly
-chopped
1 cupDiced mozzarella or
-provolone cheese
1 largeRipe tomato, seeded and dice
1/3 cupPitted, coarsely chopped
-Kalamata olives
1/4 cupPacked fresh basil leaves
-cut into thin strips
1/2 cupCrumbled feta cheese
1/2 cupGrated parmesan cheese
Mixed salad greens
Freshly ground black pepper
Procedures:
1Cook orzo according to package directions.
2Drain and rinse with cold water.
3Drain again.
4In a large bowl, combine orzo, chicken and dressing.
5Toss well.
6Add artichokes, mozzarella cheese, tomatoes, olives and basil.
7Toss well.
8Add feta and parmesan cheeses.
9Toss lightly.
10Cover and chill at least 30 minutes or up to 6 hours before serving.
11Serve on salad greens.
12Season with freshly ground black pepper to taste
