Ingredients:
4 sliceHigh fiber bread, stale
1 cupLow fat cottage cheese
2 Onions, minced
13 1/4 ozCan evaporated skim milk
3 Eggs
1 tbspParsley, minced
Salt & pepper to taste
2 tbspBacon bits, optional
Procedures:
1Line 10" pie pan with bread.
2Spread with cottage cheese and onions.
3Combine remaining ingredients except bacon bits, in blender.
4Cover; blend until smooth.
5Pour over onion layer.
6Sprinkle with bacon bits.
7Bake at 425°F for 35-40 minutes.
8Cut into 8 wedges to serve.
9Per serving: calories--129.9 carbohydrate--14.0 grams fat--2.7 grams
