Ingredients:

| cup | Oil | | 1
| cup | Flour | | 1
| | Chicken, cut up, about | | | -four pounds | | 2
| lbs | Okra, cut up | | 2
| med | Tomatoes, chopped | | 2
| large | Onions, chopped | | 1
| | Bell pepper, chopped | | 2
| tsp | Parsley, chopped | | 2
| tsp | Green onion tops, chopped | | | Salt | | | Black pepper |

Procedures:
| 1 | Brown the chicken in the oil. | | 2 | Take the chicken out. | | 3 | Add the flour to the oil and make a medium brown roux. | | 4 | Add the onions, bell pepper, tomatoes, and okra and cook slowly until the okra stops roping, maybe an hour. | | 5 | Add 3 quarts of water, slowly. | | 6 | Add the chicken. | | 7 | Cook slowly until the chicken is almost ready to fall off the bones, maybe an hour and a half. | | 8 | Add water as needed. | | 9 | Salt and pepper to taste. | | 10 | Add parsley and onion tops and serve over rice |
