Ingredients:
4 lbsJack cheese, cut in strips
1 can4 oz green chiles, seeded
4 Eggs
1/3 cupMilk
1/2 cupFlour
1/2 tspBaking powder
1 cupGrated sharp cheddar cheese
1 canMarinara sauce
Pitted ripe olives(garnish)
Procedures:
1Stuff chilies w/jack cheese.
2Arrange chilies side-by-side in greased shallow 1 ?qt. baking dish.
3Beet eggs until thick and foamy, add milk, flour and baking powder - blend.
4Pour egg batter over chiles - cover all chiles with batter.
5Sprinkle with cheddar cheese.
6Serve with heated marinara sauce and olives.
7Note: i used 18 fresh anaheim chilies (1.5 pds).
8Blistered under broiler until popped and brown.
9Then peeled and seeded.
10I also increased the recipe by half.
11Very good
