Chicken with water cress sauce

Ingredients:
10 ml2 tsp sunflower oil.
4 smallChicken breasts
2 medOnions peeled and chopped.
100 grams3, 5 oz water cress.
75 grams3 oz frozen peas.
175 grams6 oz peeled old potatoes.
450 mlThree quarters pt vegetable
Or chicken stock.
Ground black pepper.
Procedures:
1Heat the oil in a large non-stick pan and brown the chicken.
2Remove the chicken.
3Add the onions and cook for 5 minutes until just soft.
4Add the water cress and cook for a further 2 minutes.
5Return the chicken to the pan and add all the remaining ingredients.
6Cover and cook for 30 minutes.
7Remove the chicken and keep warm.
8Puree the sauce in a blender and then pour over the chicken
