Ingredients:
1/2 lbsBONELESS CHICKEN BREAST
-SKINNED & CUBED
SALT
1 EGG WHITE, LIGHTLY BEATEN
3 1/2 tspCORNSTARCH
1/2 cupVEGETABLE OIL
1/2 tspEACH CRUSHED FRESH GIN-
-GER ROOT & CRUSHED GARLIC
6 PIECES DRIED RED PEPPER
3 SCALLIONS, CHOPPED
1/2 tspSUGAR
2 tbspDARK SOY SAUCE
1 tbspCOOKING SHERRY
1 tspVINEGAR
GROUND BLACK PEPPER TO TASTE
1/2 cupPEANUTS
Procedures:
1Place the chicken meat, ?tsp. salt, egg white & ?tsp. cornstarch in a bowl & mix.
2Set aside.
3Mix remaining 3 tsp. cornstarch with 2 tbs.
4Cold water & reserve.
5Put 6 tbs.
6Oil in a wok & heat to warm.
7Drain the chicken & add to the oil, cooking just until done over low heat.
8Remove & set aside.
9Heat 2 tbs.
10Oil in a clean wok & add the ginger, garlic & red pepper and stir-fry 30 sec.
11Add reserved chicken, scallions, sugar, soy sauce, sherry & vinegar & stir-fry 1 min. add salt & pepper to taste.
12Stir in the reserved cornstarch mixture until thickened.
13Add the peanuts and mix to coat.
