Procedures:
| 1 | Place the chicken meat, ?tsp. salt, egg white & ?tsp. cornstarch in a bowl & mix. | | 2 | Set aside. | | 3 | Mix remaining 3 tsp. cornstarch with 2 tbs. | | 4 | Cold water & reserve. | | 5 | Put 6 tbs. | | 6 | Oil in a wok & heat to warm. | | 7 | Drain the chicken & add to the oil, cooking just until done over low heat. | | 8 | Remove & set aside. | | 9 | Heat 2 tbs. | | 10 | Oil in a clean wok & add the ginger, garlic & red pepper and stir-fry 30 sec. | | 11 | Add reserved chicken, scallions, sugar, soy sauce, sherry & vinegar & stir-fry 1 min. add salt & pepper to taste. | | 12 | Stir in the reserved cornstarch mixture until thickened. | | 13 | Add the peanuts and mix to coat. | | 14 | Temperature(s): hot effort: average time: 00:30 |
