Ingredients:
| | PASTRY SHELL | | 2
| cup | Flour | | 1
| dash | Salt | | 1
| cup | Butter or margarine | | 1
| tbsp | Oil | | 2
| tbsp | -Cold water, or more | | | FILLING | | 1
| | Onion, chopped | | 1
| tbsp | Butter or margarine | | 1
| dash | Dried thyme, crushed | | 1
| | Bay leaf | | 5
| oz | Bacon, chopped | | 5
| | Eggs | | 2
| | Egg yolks | | 1
| cup | Half and half | | 1
| dash | Ground nutmeg | | 1/3
| lbs | Swiss cheese, shredded |

Procedures:
| 1 | Mix flour and salt in bowl. | | 2 | Cut in 1 cup butter and oil until mixture resembles coarse meal. | | 3 | Sprinkle with water, tossing with fork until dough holds together. | | 4 | Gather into ball and chill a few minutes if dough is too soft to handle. | | 5 | Roll out pastry on floured board and fit into 10-inch quiche pan or pie plate. | | 6 | To make filling, saute onion in 1 tablespoon butter. | | 7 | Add thyme and bay leaf. | | 8 | Remove bay leaf. | | 9 | Cook bacon until crisp, then drain. | | 10 | Blend eggs, yolks, half and half and nutmeg. | | 11 | Place bacon, onion and cheese in pastry shell. | | 12 | Cover with egg mixture. | | 13 | Bake at 350f 35 to 40 minutes, or until knife inserted near center comes out clean |
