Ingredients:
5 lbsStewing hen, cut up
1/2 cupShortening
1 cupChopped onion
1/2 cupChopped fresh parsley
1/2 tbspPepper
2 lbsUncooked shrimp
1/2 cupChopped green onion
3 1/2 tbspSalt
1/2 cupFlour
2 tbspWorcestershire sauce
1 tbspLemon juice
1/2 tbspThyme
1/2 cupChopped celery
1 tbspFile powder
Procedures:
1Sprinkle chicken with 1.5 tsp of salt.
2Melt shortening in a large heavy pot.
3Add chicken pieces; brown, turning on all sides, for about 15 minutes remove chicken.
4Stir flour into hot fat in wich chicken was browned.
5Stir constantly, keeping heat low, until flour is dark brown.
