Ingredients:
6 Boneless, skinless chicken
Breast halves
Salt, pepper, garlic powder
Curry powder, flour
1/4 cupButter or margarine
1/2 lbsFresh mushrooms, thickly
Sliced
1/4 cupAmaretto di Saronno
Grated rind & juice of one
Lemon
1 1/2 cupChicken broth
1 tbspCornstarch
Patty shells
Procedures:
1Cut chicken into 1-inch wide strips.
2Sprinkle with salt, pepper, garlic powder and curry powder.
3Roll strips in flour.
4Heat butter or margarine in a large skillet.
5Brown chicken pieces on all sides.
6Add mushrooms, amaretto di sarono, grated lemon rind and juice.
7Simmer 5 minutes.
8Mix chicken broth and cornstarch; stir mixture into skillet.
9Stir over low heat until mixture bubbles and thickens.
10Season to taste with salt, if necessary.
11Spoon mixture into patty shells.
12Optional garnish: diced tomato and parsley
