Ingredients:
3 cupWater
1/2 cupMedium Pearled Barley*
-- Quaker Scotch Brand
1 tspInstant chicken bouillon
-- granules
1/2 tspSalt (optional)
2 cupChopped cooked chicken
2 cupHalved seedless grapes
-- red or green
1/2 cupChopped celery
1/4 cupChopped walnuts
3/4 cupMayonnaise or salad dressing
1 tbspMilk or water
1 tspCurry powder (optional)
Procedures:
1Bring water to a boil; stir in barley, bouillon granules, and ?teaspoon salt.
2Reduce heat.
3Cover; simmer 50 to 60 minutes or until tender, stirring occasionally.
4Drain; cool.
5Combine cooked barley, chicken, grapes, celery and walnuts.
6Combine remaining ?teaspoon salt with remaining ingredients; mix well.
7Pour over barley mixture, tossing lightly.
8Cover; chill.
9Serve in cantaloupe halves or on lettuce leaves, if desired.
10Seven 1 cup servings *note: to substitute 2/3 cup quaker scotch brand quick pearled barley, decrease water to 2 cups and cooking time to 10 to 12 minutes.
11Proceed as recipe directs.
