Chicken and cashew nuts supreme

Ingredients:
4 lbsBoneless, skinless chicken
-breasts, cut in 1" pieces
1 largeCan salted Cashew Nut
-halves or 1 large can
-Honey
-Roasted Cashew nut halves
-(great with either one)
-rinsed
-with cold water in a
-colander and drained
3 cupPeanut or Canola oil
-MARINADE:
2 tbspSalt
-dash pepper
6 tbspLA CHOY soy sauce
-VEGETABLES:
2 largeSweet onions, sliced in 1"
-squares
2 canWater chestnuts (sliced)
-SEASONINGS:
2 tbspSesame seed oil
2 tbspLA CHOY soy sauce
-salt and pepper to taste
2 tbspSugar
4 Heaping t. corn starch
6 tbspWater and MSG (optional)
-SWEET AND SOUR SAUCE:
2 cupWater
1/2 cupPacked brown sugar
1/4 cupLA CHOY Soy Sauce
2 Eggs (beaten)
2 Heaping t. corn starch
3 tbspWhite vinegar
3 tbspApple jelly
Procedures:
1This is my most requested dish.
2It has been perfected over the years and cannot possibly be improved.
3You can serve it with or without the sweet and sour sauce.
4Serve the sauce on the side along with eggrolls and fried rice.
5I love the sauce on the chicken.
6Anyway, you have a dip for your eggrolls too if its on the side.
7I make a large wok full.
8You"ll want left-overs! reheat and enjoy.
9This serves about 8 hungry people.
10If you like it, you will quit inviting "hungry people" so you have some left.....enjoy my special company oriental dinner......
11Heat all sweet and sour sauce ingredients to almost boiling, melting sugar and jelly.
12Add the amount desired of a mixture of cornstarch and cold water to thicken the sauce to the consistency you want (for dipping eggrolls, it needs to be thick) prepare chicken and vegetables as directed above.
13Prepare marinade by mixing all ingredients well with a fork.
14Put chicken pieces in a large bowl, pour marinade over and mix well to coat all the chicken pieces.
15Let sit for at least 20 minutes.
16While waiting, make the sweet and sour sauce and let simmer, stirring frequently, keeping it warm.
17In a wok or large frying pan, heat oil until hot.
18Add cashew nuts and quick fry for 30 seconds.
19Remove from oil and set aside to drain (try not to leave any nut pieces in the oil).
20Stir chicken and marinade, making sure all pieces are coated.
21Quick fry chicken in the hot oil until pieces turn white.
22Remove and drain chicken and set aside.
23Remove all oil from the pan except 3 tbsp. of oil.
24Reheat oil and add vegetables.
25Stir fry until the onions turn clear of color.
26Return chicken to pan with vegetables.
27Mix all well.
28Add seasoning mixture and mix all well again.
29Remove from heat and stir in cashews.
30Serve with eggrolls and fried rice.
31Spoon the sweet and sour sauce over the chicken or use the sauce for your eggroll dip or both.
32On the side, your guests get to choose.
33It is really wonderful either way.
