Ingredients:
2 lbsChicken, boned
1/2 cupBread crumbs
1 tbspSalt
1/8 tbspPepper
2 eachEggs, beaten
1/2 cupParmesan cheese
1 tbspOregano
1 cupWhite wine
3/4 cupSalad oil
Procedures:
1Pound chicken till thin.
2Pat dry and cut into pieces.
3Combine bread crumbs, parmesan cheese, spices and salt.
4Set aside.
5Beat eggs in a shallow dish.
6Dip chicken into egg, then into the crumb mixture, coating both sides.
7Heat oil in skillet.
8Saute" chicken until brown - about 3 minutes each side.
9Remove to a warm platter.
10Drain fat, stir in wine scraping up brown residue until boil.
11Pour over chicken
