Ingredients:

| | 4lb chicken cooked & diced | | 1 1/2
| tsp | Salt | | 2
| cup | Fresh bread crumbs | | 1
| cup | Cooked rice | | 3
| cup | Milk or chicken stock | | 4
| | Eggs well beaten | | | --Mushroom Sauce-- | | 1/4
| lbs | Mushrooms | | 1/4
| cup | Butter | | 1/4
| cup | Flour | | 1
| pint | Chicken stock | | | Salt to taste | | 1/4
| cup | Cream | | 1/8
| tsp | Paprika | | 1/2
| tsp | Parsley | | 1
| tsp | Lemon juice |

Procedures:
| 1 | For loaf: mix altogether, adding eggs last. | | 2 | Bake 1 hour in slow oven (350 degrees) in baking pan or ring mold. | | 3 | For sauce: melt butter, add mushrooms and cook slowly for 5 minutes, stirring occasionally. | | 4 | Add flour and mix well. | | 5 | Add chicken stock. | | 6 | Cook stirring constantly until thick and smooth. | | 7 | Add cream, paprika, parsley, lemon juice and salt. | | 8 | Mix and let stand over hot water until ready to serve. | | 9 | I"m very fond of this recipe, makes a nice luncheon dish. | | 10 | Cecila brown st. | | 11 | John woman"s guild cookbook, cambridge, ma, c 195 |
