Ingredients:
POULTRY
2 cupPeanut oil
6 ozRice noodles
2 lbsChicken breasts, boned & cu
2 ea Lemons, thinly sliced
MARINADE
2 tbspSherry
2 tbspSoy sauce
1/4 tspMixed vegetable seasoning
2 tspFresh ginger, grated
1 tspHoney
BATTER
1 cupWhole wheat or rice flour
1/2 cupArrowroot
1/2 tspSoy sauce
1 tspBaking powder
2 cupIce water
1 tbspOil
LEMON PLUM SAUCE
1 tbspOil
?ea Inch ginger root, mashed
1 ea Clove garlic, crushed
2 tbspHoney
2 cupChicken broth
1/2 cupLemon juice
3/4 cupBottled plum sauce
1 ea Pinch salt
2 tbspSherry
1 ea Grated lemon peel
2 1/2 tbspArrowroot
Procedures:
1Combine ingredients for marinade, and marinate chicken for at least ?hour.
2Mix together ingredients for batter; set aside.
3In sauce pan, combine ingredients for plum sauce and heat over medium heat, stirring occasionally; set aside, but keep warm.
4Heat peanut oil in wok or fry pan until very hot, about 400 degrees; deep fry noodles until puffed, about ?minute; drain; set aside.
5Drain chicken and dip in batter.
6Deep fry chicken in 350 degree oil for 5 minutes or until golden brown.
7Place noodles on a plate.
8Arrange lemon slices around on noodles.
9Put chicken in center.
10Pour hot plum sauce over chicken.
11Serve. serves
