Ingredients:
2 eachChicken legs, thighs & wings 1 c Salted mustard green, shredd
8 cupCold water
Procedures:
1Preparation: separate thighs, legs and wings from chicken carcass, and chop them into bite-size pieces.
2Be sure to remove any bone splinters.
3Chop carcass into several pieces.
4Drain the mustard green; cut into 2" square pieces.
5Soup: put chicken and cold water in large pot.
6Bring to boil; skim froth and chicken fat; reduce heat to simmer.
7Simmer for 2 hours.
8Remove chicken carcass.
9Add mustard green; simmer another 15 minutes.
10Transfer soup with pieces and mustard green to serving bowl.
11Serve.
