Ingredients:
| 4
| tbsp | Butter | | | 5 ea Eggs | | 1/4
| cup | Flour | | 1/2
| tsp | Baking powder | | 1
| dash | Salt | | 4
| oz | Chilies, green, chopped | | 1
| cup | Cottage cheese, small curd | | 8
| oz | Monterey Jack, shredded |

Procedures:
| 1 | Preheat oven to 400. | | 2 | Melt butter in 9" square pan in oven. | | 3 | Tip pan to coat bottom with melted butter. | | 4 | In large bowl, beat eggs. | | 5 | Stir in flour, baking powder, and salt. | | 6 | Add melted butter; set pan aside. | | 7 | Stir in chilies, cottage cheese, and cheese. | | 8 | Blend well. | | 9 | Turn batter into pan. | | 10 | Bake 15 minutes. | | 11 | Reduce heat to 350 degrees. | | 12 | Bake 30-35 minutes longer or until lightly browned. | | 13 | Cool slightly and cut into small squares. | | 14 | May be frozen. | | 15 | If you freeze, flash freeze. | | 16 | Flash freeze means to freeze food uncovered until solid, then wrap well and return to freezer. | | 17 | Use within 2-3 months. | | 18 | How to thaw: place on baking sheet. | | 19 | Thaw 1-2 hours at room temperature. | | 20 | Before serving, reheat in 400°F oven 10 minutes or until hot. | | 21 | Note: the recipe may be doubled and baked in a 13"x9" baking dish. | | 22 | Sylvia"s notes: as usual, i didn"t have the right size pan, so baked it in two pie pans for 15 minutes at 400 and then 15 minutes at 350. | | 23 | They were just a hair too well browned. | | 24 | Quite tasty and would work well as a potluck where they could be kept warm or nuked |
