Ingredients:
1 cupButter, softened
2 tbspChopped shallots
2 tbspChopped garlic
2 tbspChampagne or white wine
1 tbspWorcestershire Sauce
1 tbspChopped fresh parsley
1 tspBrandy
1 tspLemon juice
1/2 tspSalt
1 pinchPepper
36 Snails and shells
Procedures:
1Mix, but do not whip, all ingredients except snails.
2Heat mixture in large skillet.
3Add snails and simmer 10 to 15 minutes, allowing liquid to cook into snails.
4Preheat oven to 350 degrees.
5Put small amount of butter mixture into bottom of each shell.
6Insert snail using end of fork.
7Top with additional butter mixture.
8Continue until all shells are filled, placing them in flat baking dish as they are completed.
9Pour remaining butter mixture over snails and heat until bubbling, about 10 minutes.
