Ingredients:
1 1/2 cupFlour
1 cupMilk
1 tspBaking powder
1 cupCottage cheese
1/2 tspSalt
5 tbspSugar
1 tspVanilla extract
1/2 cupOil, for frying
Procedures:
1Place all the ingredients except oil together in a large bowl.
2Mix until smooth.
3Heat ?cup oil in a skillet.
4Using a large spoon, drop the batter into hot oil.
5Fry 2 to 3 min. on each side, until lightly browned.
6Continue until batter is used up, adding oil when necessary.
7The latkes may be served also topped with applesauce or maple syrup.
