Ingredients:

| cup | Flour | | 1
| cup | Milk | | 1
| tsp | Baking powder | | 1
| cup | Cottage cheese | | 1/2
| tsp | Salt | | 5
| tbsp | Sugar | | 1
| tsp | Vanilla extract | | 1/2
| cup | Oil, for frying |

Procedures:
| 1 | Place all the ingredients except oil together in a large bowl. | | 2 | Mix until smooth. | | 3 | Heat ?cup oil in a skillet. | | 4 | Using a large spoon, drop the batter into hot oil. | | 5 | Fry 2 to 3 min. on each side, until lightly browned. | | 6 | Continue until batter is used up, adding oil when necessary. | | 7 | The latkes may be served also topped with applesauce or maple syrup. | | 8 | Enjoy |
