Ingredients:
1 1/2 cupChicken breast, cooked, minced
8 ozNeufchatel cheese, softened
3 tbspChopped onion
2 tbspDry sherry
2 tbspMayonnaise (diet)
2 tspLemon juice
1/4 tspHot sauce
1/8 tspGround nutmeg
1 dashPaprika
Procedures:
1Combine chicken (which has been finely chopped), neufchatel, onion, sherry, mayonnaise, lemon juice, hot sauce, and nutmeg in container of electric blender; process until smooth.
2Transfer mixture to a 2 cup mold coated with cooking spray (pam).
3Cover, and chill overnight.
4Unmold onto a serving plate.
5Sprinkle with paprika.
6Garnish with parsley sprigs, if desired.
7Serve with melba toast rounds or unsalted crackers.
8Yield: 1 ?cups (28 calories per tablespoon).
