| | Eggs, beaten |

Procedures:
| 1 | Preheat the oil in the deep fryer to 400 degrees. | | 2 | Season each half chicken breast lightly with salt. | | 3 | Flatten slightly using a meat mallet. | | 4 | Place 1 piece of cheese in each chile. | | 5 | Place each stuffed chile on the end of one half chicken breast. | | 6 | Roll each chicken breast as you would a jelly roll, enclosing the chile. | | 7 | Secure using toothpicks. | | 8 | Beat the eggs and milk together. | | 9 | Dip each chicken breast roll in the egg mixture. | | 10 | Dip each into the seasoned flour. | | 11 | Deep fry each chicken roll until golden (4-5 minutes). | | 12 | Drain. | | 13 | Serve hot, with salsa. | | 14 | Yields 48 serving |
