Ingredients:
12 lbsBoneless skinless chicken br
1 cupMilk
1 3/4 cupFlour, seasoned with
Salt, pepper & paprika
48 Green chiles
2 lbsMonterey jack, cut into 48 p
5 cupSalsa verde, or salsa rojo
8 Eggs, beaten
Procedures:
1Preheat the oil in the deep fryer to 400 degrees.
2Season each half chicken breast lightly with salt.
3Flatten slightly using a meat mallet.
4Place 1 piece of cheese in each chile.
5Place each stuffed chile on the end of one half chicken breast.
6Roll each chicken breast as you would a jelly roll, enclosing the chile.
7Secure using toothpicks.
8Beat the eggs and milk together.
9Dip each chicken breast roll in the egg mixture.
10Dip each into the seasoned flour.
11Deep fry each chicken roll until golden (4-5 minutes).
12Drain.
13Serve hot, with salsa.
14Yields 48 serving
