Chicken croquettes

Ingredients:
1/2 cupButter
2 tbspFlour
1 1/4 cupMixed milk and chicken
Stock
2 cupGround cooked chicken
Salt
Freshly ground pepper
1 Beaten egg
2 tbspDry bread crumbs
Oil for frying
Procedures:
1Melt the butter in a saucepan and stir in the flour.
2Gradually stir in the liquid and cook, stirring, until the sauce is thick and smooth.
3Stir in the minced chicken and season well.
4Continue cooking for about 1 minute, on a low heat, until the mixture is firm enough to hold together in a mass.
5Remove from the heat and allow to cool slightly, then, with floured hands, form the mixture into little sausage shapes.
6Brush these with beaten egg and coat with bread crumbs.
7Shallow fry in hot oil until golden brown.
8Servw hot or cold
