| pack | Unflavored gelatin | | 1

| cup | Ham, chopped, cooked | | 1
| tbsp | Madeira | | 1
| cup | Heavy cream |

Procedures:
| 1 | In a medium-size saucepan, melt butter over medium heat. | | 2 | Add scallions and cook 2 mintues. | | 3 | Stir in stock and gelatin. | | 4 | Simmer, stirring, until gelatin dissolves. | | 5 | Pour into a food processro. | | 6 | Add chicken,ham and madeira to processor. | | 7 | Process until smooth. | | 8 | Pour into a bowl, cover, and chill until almost set. | | 9 | Meanwhile, beat cream until stiff. | | 10 | Fold whipped cream into chicken and ham mixture and pack into a lightly greased 6-cup mold. | | 11 | Cover and refrigerate at least 2 hours, or overnight, until set |
