Ingredients:

| | Duck, 5-6 pounds | | 1/2
| cup | Red Wine | | 1
| tbsp | Orange Peel | | 1
| | Garlic clove | | 3
| tbsp | Oil | | 1
| tbsp | Potato starch | | 1 1/4
| cup | Orange Juice | | 1
| tbsp | Honey | | 1/4
| tsp | Ginger | | 1/8
| tsp | Pepper | | 1
| cup | Orange sections |

Procedures:
| 1 | Puncture duckling generously with fork, place on rack in roasting pan. | | 2 | Pour most of the sweet red wine over ducking pieces. | | 3 | Roast in slow oven (325°F)., basting occasionally, allowing 25 minutes per pound. | | 4 | In medium saucepan, saute orange peel and garlic in oil. | | 5 | Mix in potato starch until smooth. | | 6 | Slowly add orange juice, honey and remaining wine. | | 7 | Simmer 1 minutes. | | 8 | Mix in ginger, pepper and orange sections; simmer for 5 minutes. | | 9 | Serve hot sauce with roast ducking |
