Ingredients:
2 cupUNBLEACHED WHITE FLOUR
1/2 tbspSALT
1 tbspCAYENNE PEPPER
8 ozSHARP CHEDDAR CHEESE (GRATED
5 ozMARGARINE (MELTED)
1/4 cupFLOUR (FOR ROLLING DOUGH)
1 tbspOIL (FOR BAKING SHEET)
Procedures:
1Preheat oven to 400°F.
2In a large bowl, mix flour, salt, cayenne pepper, and cheese thoroughly.
3Add melted margarine and mix.
4Chill dough in refrigerator for 20 minutes.
5Place dough on a large, floured board.
6Place a large piece of waxed paper on top of dough or use a heavily-floured rolling pin.
7Roll dough to ?inch thick.
8Remove wax paper.
9Holding a fork upside down, draw the prongs vertically along dough from top to bottom, making ridges.
10With a wide, flat knife cut dough into rectangular shapes 3 x 1 inch.
11Oil a cookie sheet and place cut cheese on it.
12Bake in 400°F oven for 10-12 minutes until cheese straws look dry but not brown.
13Let cool.
14Repeat procedure until all of dough is baked.
15Serve at room-temperature.
16Freezes well.
17Yields 7 dozen
